Ingredients:
- 2 cups almond flour
- 1/3 cup granulated erythritol
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup unsalted butter, softened
- 1 large egg
Instructions:
Prepare the oven by heating it up to 325F 165C
Put the almond flour, erythritol, and salt in a bowl and mix them together
When the butter is soft, add it along with the egg and vanilla extract
Mix the things together until a dough forms
Put the dough in the fridge for 15 to 20 minutes if it is too sticky
Put the dough on a piece of parchment paper that you have laid out on the work surface
Wrap the dough in another piece of parchment paper and roll it out until its the thickness you want for the cookie
Cut shapes out of the rolled-out dough with cookie cutters
Move the cut-out cookies carefully to a baking sheet that has parchment paper on it
Gather the last bits of dough, roll them out again, and cut more cookies until all the dough is gone
After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden brown
After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet
Then, move them to a wire rack to cool all the way down
