Ingredients:
- 4 cups fresh strawberries, hulled and sliced
- 2 cups granulated sugar
- 1 vanilla bean, split and seeds scraped
- 1 lemon, juiced
- 1/2 teaspoon lemon zest
Instructions:
In a large mixing bowl, combine the sliced strawberries and granulated sugar
Mix well and let it sit for 1 hour, stirring occasionally
After an hour, transfer the strawberry mixture to a large, heavy-bottomed saucepan
Add the scraped vanilla bean seeds, lemon juice, and lemon zest to the saucepan
Place the saucepan over medium heat and bring the mixture to a boil
Stir frequently to prevent sticking or burning
Once it boils, reduce the heat to low and let it simmer for about 20-25 minutes, or until the jam thickens and reaches the desired consistency
Be sure to stir occasionally
While the jam is simmering, prepare clean, sterilized jars for canning
Once the jam is ready, remove the saucepan from the heat
Discard the vanilla bean pod
Carefully ladle the hot jam into the prepared jars, leaving about 1/4 inch of headspace at the top
Wipe the jar rims clean, place sterilized lids and rings on the jars, and tighten them securely
Process the jars in a boiling water bath for 10 minutes to ensure they seal properly
Remove the jars from the water bath and let them cool on a clean towel or cooling rack
Once cooled, check that the lids have sealed properly by pressing down on the center of each lid
If it doesnt pop back, its sealed
Label the jars with the date and store them in a cool, dark place
