Ingredients:
- 1 rack of lamb about 2 lbs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1/2 cup red wine
- 1 tablespoon Dijon mustard
Instructions:
Mix minced garlic, rosemary, thyme, salt, and black pepper with olive oil and rub it all over the rack of lamb
Put the trivet in the Instant Pot and add the red wine and chicken broth
The rack of lamb should be carefully placed on the trivet inside the Instant Pot
Put the lid on top and turn the valve to sealing
Cook for 20 minutes on high pressure
After its done, quickly let the pressure out of the Instant Pot and carefully take the lamb out
To make a glaze, mix Dill mustard and a tablespoon of the Instant Pots cooking liquid in a small bowl
The mustard glaze should be spread on top of the rack of lamb
Warm up the broiler, then put the lamb under it for three to five minutes to get a golden crust
Wait a few minutes before cutting it into chops
Enjoy the tasty rack of lamb with herbs served with your favorite sides
