Ingredients:
- 1 can 15 oz pumpkin puree
- 3/4 cup coconut milk
- 1/2 cup honey or maple syrup
- 3 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp salt
- Optional: whipped coconut cream, for serving
Instructions:
Preheat oven to 350F 175C
In a mixing bowl, combine pumpkin puree, coconut milk, honey or maple syrup, eggs, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt
Mix until well combined
Pour the mixture into a greased pie dish
Bake for 45-50 minutes or until the center is set
Remove from oven and let it cool before serving
