Ingredients:
- 8 rice paper wrappers
- 1 bunch asparagus, trimmed
- 200g tofu, sliced into strips
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 1 cup shredded lettuce
- 1 cup shredded carrots
- 1/2 cucumber, julienned
- Fresh mint leaves
- Fresh cilantro leaves
Instructions:
Set the grill on medium heat
Put soy sauce, olive oil, garlic powder, ground ginger, salt, and pepper in a bowl and mix them together
To make the coating even, toss the tofu strips in the mixture
Grill the asparagus and tofu for 5 to 7 minutes, turning them over every now and then, until they are lightly charred and soft
Spread warm water out in a small dish
For a few seconds, dip one rice paper wrapper into the water to make it soft
Clean a surface and lay the wrapper flat on it
Place some cucumber, grilled tofu, grilled asparagus, mint leaves, and cilantro leaves in the middle of the wrapper
Have someone else help you
To make a burrito, fold the sides of the wrapper over the filling and then roll it up tight
Do it again with the rest of the ingredients
Add 2 tablespoons of lime juice, 1 tablespoon of maple syrup, 1 teaspoon of grated ginger, and 1 teaspoon of sesame oil to a bowl and mix them together
This will make the dipping sauce
Put the spring rolls out and dip them in the sauce
