Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup buttermilk
- 1/4 cup hibiscus tea concentrate
- 1/4 cup fresh lime juice
- 2 large eggs
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Zest of 1 lime
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions:
Mix the flour, sugar, baking soda, baking powder, and salt in a mixing bowl
Beat together the buttermilk, hibiscus tea concentrate, eggs, melted butter, vanilla extract, and lime zest in a separate bowl
Blend thoroughly
Mixing until just combined, pour the wet ingredients into the dry ingredients
The batter should be slightly lumpy; do not overmix
Preheat vegetable oil to 350F 175C in a deep fryer or large pot with a heavy bottom
To create a spiral effect, pipe the donut batter into the hot oil in a swirling pattern using a piping bag or a zip-top bag with the corner cut off
Fry in small batches, taking care not to pack the pot too full
The donuts should be cooked through and golden brown after two to three minutes of frying on each side
Using a slotted spoon, remove the donuts and set them on a plate covered with paper towels to remove excess oil
Before serving, sprinkle powdered sugar over the warm donuts and allow them to cool slightly
