Indulge in a gluten-free twist on classic crepes with this easy and satisfying recipe. These crepes are perfect for a weekend brunch or a sweet treat any time of the day.

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup almond milk or any other dairy-free milk
  • 2 tablespoons melted coconut oil
  • 1/2 teaspoon vanilla extract
  • Cooking spray or extra coconut oil for the pan

Instructions:

In a mixing bowl, whisk together the gluten-free flour, sugar, and salt

In a separate bowl, beat the eggs and then add the almond milk, melted coconut oil, and vanilla extract

Mix well

Gradually add the wet ingredients to the dry ingredients while continuously whisking to form a smooth batter

Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with cooking spray or coconut oil

Pour a small amount of batter into the hot pan, swirling it around to evenly coat the bottom

Cook for about 1-2 minutes until the edges start to lift and the crepe is set

Carefully flip the crepe and cook for an additional 1-2 minutes until its lightly golden brown

Transfer the cooked crepe to a plate and repeat the process with the remaining batter, greasing the pan as needed

Serve the gluten-free crepes with your favorite fillings such as fresh berries, whipped coconut cream, or a drizzle of maple syrup
