Ingredients:
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
- 2 tablespoons unsalted butter
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
Instructions:
Warm the oven up to 350F 175C and grease a 9x9-inch baking pan
Add the pumpkin puree, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract to a large bowl
Use a whisk to mix the ingredients well
Mix the flour, baking soda, ground cinnamon, ground nutmeg, and salt in a different bowl using a whisk
Slowly add the dry ingredients to the pumpkin mixture and mix them in until they are just combined
If the cream cheese is soft, beat it in a different bowl until it is smooth
It will be smooth after you add the powdered sugar and vanilla extract
Pour the pumpkin batter into the baking pan that has been ready, and make the top smooth
Put small amounts of the cream cheese mix on top of the pumpkin batter
To make a marbled look, swirl the cream cheese into the pumpkin batter with a knife or toothpick
Melt the butter in a small pot
Add the ground cinnamon, brown sugar, and chopped pecans
Stir the mixture all the time for about two minutes, or until it is well mixed and slightly thickened
The pecan mixture should be poured over the batter in the baking pan
Put it in the oven and bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean
