Sonoma County Wine and Food Pairing

Ingredients:

  • 1 bottle Sonoma County Pinot Noir
  • 8 oz
  • Sonoma County goat cheese
  • 1 baguette, sliced
  • 1 cup fresh strawberries, sliced
  • 1/4 cup balsamic vinegar
  • 1/4 cup honey
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste

Instructions:

Warm the oven up to 175F 350C

Put the baguette slices on a baking sheet

Add some olive oil and salt and pepper to taste

For 10 to 12 minutes, or until just barely toasted

Balsamic vinegar and honey should be mixed together in a small saucepan

Lower the heat to medium and bring to a simmer

Cook for about 5 to 7 minutes, or until the liquid is half lost

Take it off the heat and let it cool down

On the toasted baguette slices, spread goat cheese

Place strawberry slices on top of each crostini and drizzle with the balsamic reduction

Add chopped basil as a garnish

Pair with a glass of Sonoma County Pinot Noir

Ingredients:

  • 1 cup peanut butter
  • 1 cup butter
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions:

Preheat oven to 350F 175C

Grease a 9x13 inch baking pan

In a medium saucepan, melt peanut butter and butter over low heat, stirring frequently

Remove from heat, and stir in sugar, eggs, and vanilla extract until well combined

In a separate bowl, sift together flour, cocoa powder, and salt

Gradually add dry ingredients to peanut butter mixture, stirring until smooth

Fold in chocolate chips

Pour batter into prepared baking pan and spread evenly

Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs

Allow to cool completely before cutting into bricks

15 Minute Skinny Shrimp and Grits

If you use cauliflower instead of regular grits in this recipe, it makes shrimp and grits lighter. Its easy to make and tastes great, making it perfect for a busy weeknight dinner.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 cups cauliflower florets
  • 1 cup almond milk
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions:

Pulse the cauliflower florets in a food processor until they look and feel like grits

Put olive oil in a saucepan and heat it over medium-low heat

Mix in the garlic and cook until it smells good

To make the cauliflower grits, put them in the saucepan and cook for two to three minutes

Add the Parmesan cheese, paprika, cayenne pepper, salt, and pepper, and mix them in

For about 5 minutes, cook until the mixture gets thicker

Put olive oil in a different pan and heat it over medium-high heat

Add the shrimp to the pan after seasoning them with salt, pepper, and paprika

About two to three minutes on each side, cook until the shrimp is pink and opaque

Put the shrimp on top of the cauliflower grits and sprinkle chopped parsley on top


Healthy Vegan Chocolate Mousse Cake

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup almonds, chopped for garnish

Instructions:

Using a food processor, blend the dates, cocoa powder, maple syrup, salt, and cooked sweet potato until the mixture is smooth and creamy

Put parchment paper around the edges of a cake pan and press the mixture into the bottom of it

Put in the fridge for at least four hours, or until it sets

When its done, take it out of the pan and sprinkle chopped almonds on top

Cut it up and serve it cold
