Ingredients:
- 1 medium head cauliflower, grated or finely chopped
- 2 tablespoons sesame oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked and diced chicken or leftover ham
- 1/2 cup frozen peas
- 2 tablespoons soy sauce or tamari for gluten-free
- 2 large eggs, beaten
- 2 green onions, sliced for garnish
- Salt and pepper to taste
Instructions:
Rinse the cauliflower to get rid of any extra water
Use a box grater or pulse the cauliflower in a food processor until it looks like rice grains
Put the sesame oil in a large pan or wok and heat it over medium-high heat
Chop the onion and garlic and add them to the pan
Saut them until they get soft and clear
Add the diced chicken or ham that you saved, and cook for a few minutes until everything is hot
Add the grated cauliflower to the pan and mix it with the other things that are already there
Add the soy sauce to the cauliflower mixture and stir it around a few times more
Cook for three to four more minutes
After moving the cauliflower mix to one side of the pan, pour the beaten eggs into the empty side
Once the eggs are done, add them to the cauliflower mixture and mix them in
After you add the frozen peas to the pan, cook for two more minutes or until they are warm all the way through
Add pepper and salt to taste
Before serving, top with sliced green onions
