Ingredients:
- 1 cup butter, softened
- 1 cup brown sugar
- 1/2 cup molasses
- 1 large egg
- 4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fruit jam such as raspberry or strawberry
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, cream together the softened butter and brown sugar until smooth
Add the molasses and egg, and mix well
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Divide the dough into two portions, wrap them in plastic wrap, and refrigerate for about 30 minutes
On a lightly floured surface, roll out one portion of the dough to about 1/4-inch thickness
Use a round cookie cutter to cut out cookies and place them on the prepared baking sheet
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Spread a thin layer of fruit jam on the bottom side of one cookie, then sandwich it with another cookie
Repeat the process with the remaining cookies and jam
Dust the tops of the cookies with powdered sugar for a finishing touch
