Ingredients:
- 4 veggie burger patties
- 4 burger buns
- 1 cup fresh arugula
- 1/2 cup fresh basil leaves
- 1/4 cup pine nuts
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, sliced
- 2 large tomatoes, sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Set your grill or griddle on the stove to medium-high heat to get it ready
You can make arugula pesto by putting arugula, basil, pine nuts, minced garlic, and Parmesan cheese in a food processor and running it
Slowly add olive oil until you get the consistency you want
Blend until smooth
Add pepper and salt
Veggie burger patties should be grilled for three to four minutes on each side, or until theyre hot all the way through and have grill marks
Add mozzarella cheese to top of each patty in the last minute of cooking and let it melt
Toast the burger buns on the grill until theyre just barely crispy while the burgers are cooking
Put the burgers together: Use a lot of arugula pesto to cover the bottom half of each bun
Cover a veggie burger patty with mozzarella cheese that has been melted
Add fresh basil leaves and tomato slices
Put the other half of the bun on top
