Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions:
Preheat your oven to 350F 175C and line an 8x8 inch 20x20 cm baking pan with parchment paper
In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, lemon juice, lemon zest, vanilla extract, and a pinch of salt
Mix until a dough forms
Press the dough evenly into the prepared baking pan, making sure its compacted
Bake in the preheated oven for 18-20 minutes or until the edges are golden brown
Remove from the oven and let it cool completely in the pan
Once cooled, cut into bars and refrigerate for an hour before serving
