Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 4 cups mixed greens e

- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup corn kernels fresh or frozen
- 1/4 cup black beans, drained and rinsed
- 1/4 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup ranch dressing
- Salt and pepper to taste
Instructions:
Marinate the chicken breasts in 1/2 cup of BBQ sauce for 30 minutes
Preheat grill to medium-high heat
Grill the chicken for about 6-7 minutes per side or until cooked through, basting with the remaining BBQ sauce during cooking
Remove from grill and let it rest for a few minutes before slicing
In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, corn, and black beans
Top the salad with sliced BBQ chicken, shredded cheddar cheese, and chopped cilantro
Drizzle ranch dressing over the salad, and season with salt and pepper to taste
Toss everything together gently to combine all the ingredients
Serve immediately and enjoy
