This Jamaican Spicy Potato Curry is a vegan delight packed with bold flavors and creamy coconut milk. Its a perfect dish to warm you up and satisfy your cravings for a spicy, comforting meal.
Ingredients:
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1 can 14 oz coconut milk
- 1 cup vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Warm up a big pan with olive oil over medium-low heat
Put in the minced garlic and chopped onion
Saut until the onion turns clear
After you add the red bell pepper and diced potatoes, cook for about 5 minutes
Add the cumin, cayenne pepper, curry powder, and turmeric and mix them in
Cook for two more minutes
Add the vegetable broth and coconut milk, and season with salt and pepper
For 20 to 25 minutes, or until the potatoes are soft, cover and simmer
Add fresh cilantro as a garnish before serving
