This vegan chocolate mousse cake is rich and decadent, but its also good for you. Its rich, creamy, and completely satisfying. Its made with healthy things like sweet potato and dates.
Ingredients:
- 2 cups cooked sweet potato, mashed
- 1 cup unsweetened cocoa powder
- 1 cup dates, pitted
- 1/2 cup almond milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup almonds, chopped for garnish
Instructions:
Using a food processor, blend the dates, cocoa powder, maple syrup, salt, and cooked sweet potato until the mixture is smooth and creamy
Put parchment paper around the edges of a cake pan and press the mixture into the bottom of it
Put in the fridge for at least four hours, or until it sets
When its done, take it out of the pan and sprinkle chopped almonds on top
Cut it up and serve it cold
